Diabetic-Friendly Crunchy Cheese Crackers

Diabetic-Friendly Crunchy Cheese Crackers

Crispy, salty, buttery, low-carb crackers you’ll want to make every week!

These diabetic-friendly crackers are shockingly good — crisp, cheesy, and perfectly seasoned with just the right snap. If you’ve been missing the joy of munching on something crunchy while keeping carbs low and blood sugar stable, THIS is your new go-to snack.

Pair them with cream cheese (onion-chive is elite, you’re right), low-carb dips, keto salsa, or just eat them straight out of the container like a bag of chips. They’re THAT addictive.

And the best part?
You need only a few basic ingredients, they bake in under 20 minutes, and they store beautifully for snacking all week long.

🛒 Ingredients

  • 1 cup shredded sharp cheddar (or any hard cheese)
  • 1 cup almond flour
  • 2 tbsp butter, softened
  • 1 tbsp cream cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried rosemary or thyme (optional but delicious!)
  • 1 egg
  • Salt & black pepper to taste

👩‍🍳 How to Make These Low-Carb Crackers

1️⃣ Mix the Dough

In a bowl, combine:
✔ almond flour
✔ shredded cheese
✔ butter
✔ cream cheese
✔ spices
✔ egg

Stir until you have a thick, slightly sticky dough (as shown in photo #1).

2️⃣ Roll & Score

Spread the dough into a thin sheet on a parchment-lined tray.
Slice into small squares using a pizza cutter.
Sprinkle with salt, pepper, or herbs (photo #2).

3️⃣ Bake to Crispy Perfection

Bake at 350°F (175°C) for 15–18 minutes, or until golden and crisp (photo #3).

Tip: For extra crunch, turn the oven OFF and leave the crackers inside for 5 extra minutes.

4️⃣ Cool Completely

As they cool, they firm up into those beautiful, crunchy, Cheez-It-style squares you see in photo #4.

📦 Storage

Store in an airtight container for 7–10 days.
