This recipe became an instant family favorite the moment my mother-in-law served it. The smell alone had everyone drifting toward the kitchen like cartoon characters floating on aroma clouds. One bite… and we all looked at each other like, “Wait—this is LOW CARB?!”

The trick is simple: we use thin chicken cutlets as the “tortilla.” They crisp up beautifully, hold the cheese perfectly, and keep blood sugar levels steady. It’s fast, satisfying, and takes weeknight dinners from “eh” to WOW with almost no effort.


⭐ Ingredients (4 servings)

  • 2 large chicken breasts, sliced into thin cutlets or pounded thin
  • 1 cup shredded mozzarella
  • ½ cup shredded cheddar
  • 1 tablespoon olive oil or butter
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon Italian seasoning
  • Salt & pepper to taste
  • Optional add-ins: sliced jalapeños, chives, sautéed onions, spinach

🍳 Instructions

1. Prep the chicken tortillas

Pound your chicken pieces thin (about ¼ inch). Season both sides with salt, pepper, garlic powder, and onion powder.

2. Pan-sear

Heat oil/butter in a skillet and cook chicken for 3–4 minutes per side until lightly golden. Lay them flat on a baking tray.

3. Add the toppings

Sprinkle mozzarella + cheddar over each piece generously.
Add jalapeños or herbs if you like extra flavor.

4. Broil or bake

Place under the broiler on HIGH for 2–3 minutes (or bake at 400°F/200°C for 7 minutes), until cheese is bubbly and lightly browned.

5. Serve

Slice like quesadillas and serve hot! These are amazing dipped in sugar-free salsa, Greek yogurt, or guacamole.
