🛒 Ingredients (Makes 12–14 cookies)
- 1 ½ cups unsweetened shredded coconut
- ½ cup sliced almonds (or chopped roasted almonds)
- ½ cup sugar-free chocolate chips
- ½ cup sugar-free sweetened condensed milk
(or make your own: 1 cup heavy cream + ¼ cup allulose, simmer until thick) - 1 tsp vanilla extract
- Pinch of salt
Optional:
- 2 tbsp almond butter for extra chewiness
- 1–2 tbsp allulose or monk fruit if you prefer sweeter cookies
👩🍳 Instructions
1️⃣ Preheat & Prep
Heat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2️⃣ Mix Everything Together
In a bowl, combine:
- Coconut
- Almonds
- Chocolate chips
- Sweetened condensed milk
- Vanilla
- Salt
Mix until the dough holds together. (If too dry, add a spoonful of condensed milk. If too wet, add a bit more coconut.)
3️⃣ Scoop & Shape
Drop spoonfuls onto the baking sheet and gently flatten into cookie shapes — they will not spread much.
4️⃣ Bake
