🛒 Ingredients (Makes 12–14 cookies)

  • 1 ½ cups unsweetened shredded coconut
  • ½ cup sliced almonds (or chopped roasted almonds)
  • ½ cup sugar-free chocolate chips
  • ½ cup sugar-free sweetened condensed milk
    (or make your own: 1 cup heavy cream + ¼ cup allulose, simmer until thick)
  • 1 tsp vanilla extract
  • Pinch of salt

Optional:

  • 2 tbsp almond butter for extra chewiness
  • 1–2 tbsp allulose or monk fruit if you prefer sweeter cookies

👩‍🍳 Instructions

1️⃣ Preheat & Prep

Heat oven to 350°F (175°C) and line a baking sheet with parchment paper.

2️⃣ Mix Everything Together

In a bowl, combine:

  • Coconut
  • Almonds
  • Chocolate chips
  • Sweetened condensed milk
  • Vanilla
  • Salt

Mix until the dough holds together. (If too dry, add a spoonful of condensed milk. If too wet, add a bit more coconut.)

3️⃣ Scoop & Shape

Drop spoonfuls onto the baking sheet and gently flatten into cookie shapes — they will not spread much.

4️⃣ Bake
