  • 2 medium zucchinis, sliced into ¼-inch rounds
  • 1 tbsp olive oil
  • ½ cup vegan Parmesan (store-bought or homemade)
  • ¼ cup breadcrumbs (gluten-free if needed)
  • ½ tsp garlic powder
  • ¼ tsp salt
  • Freshly cracked black pepper, to taste
  • Optional: fresh parsley, chopped (for garnish)

👩‍🍳 Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Mix coating: Combine vegan Parmesan, breadcrumbs, garlic powder, salt, and pepper in a bowl.
  3. Prep zucchini: Toss slices in olive oil to coat evenly.
  4. Coat: Dip each slice into the breadcrumb mixture, pressing lightly to adhere.
  5. Arrange and bake: Place on the tray in a single layer and bake for 20–25 minutes, flipping halfway through, until golden and crisp.
