- 2 medium zucchinis, sliced into ¼-inch rounds
- 1 tbsp olive oil
- ½ cup vegan Parmesan (store-bought or homemade)
- ¼ cup breadcrumbs (gluten-free if needed)
- ½ tsp garlic powder
- ¼ tsp salt
- Freshly cracked black pepper, to taste
- Optional: fresh parsley, chopped (for garnish)

- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Mix coating: Combine vegan Parmesan, breadcrumbs, garlic powder, salt, and pepper in a bowl.
- Prep zucchini: Toss slices in olive oil to coat evenly.
- Coat: Dip each slice into the breadcrumb mixture, pressing lightly to adhere.
- Arrange and bake: Place on the tray in a single layer and bake for 20–25 minutes, flipping halfway through, until golden and crisp.
