Crispy Homemade Onion Rings
Crispy Homemade Onion Rings (Family Favorite!)
“I don’t think I’d be let through the door if I didn’t bring these! My family is beyond obsessed. People who aren’t crazy about onions even end up with some on their plate. Highly recommend!!!”
These golden, crunchy onion rings are a surefire crowd-pleaser — light, crispy, and irresistibly good. Perfect for gatherings, game nights, or a guilt-free snack fix.
Traditional onion rings are usually deep-fried and made with refined flour, but this version cuts down on oil and carbs without sacrificing crunch.
Ingredients
- 2 medium onions, sliced into ½-inch rings
- ½ cup almond flour (or whole wheat flour)
- ¼ cup cornmeal or crushed whole-grain crackers (optional for texture)
- 1 egg (or flax egg: 1 tbsp flaxseed + 2½ tbsp water)
- ½ tsp garlic powder
- ½ tsp paprika
- Salt and pepper to taste
- Olive oil spray
Instructions
- Preheat oven to 200°C (400°F) or air fryer to 190°C (375°F).
- Separate onion rings and pat them dry.
- Mix almond flour, cornmeal, garlic powder, paprika, salt, and pepper.
- Dip each ring into the beaten egg, then coat in the dry mix.
- Place on a lined baking tray or air fryer basket. Spray lightly with olive oil.
- Bake or air-fry for 10–15 minutes, flipping halfway, until crisp and golden.
Tips
- For extra crunch, double-coat the rings (egg → dry mix → egg → dry mix).
- Serve with a Greek yogurt dip or sugar-free ketchup.
💚 Why It’s Great for Diabetics
- Lower in carbs (thanks to almond flour).
- Air-fried, not deep-fried — reduces oil and calories.
- Onions provide antioxidants and fiber, helping balance blood sugar.
