  • 1 cup almond flour
  • ¼ cup powdered erythritol or monk fruit sweetener
  • 1 egg
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¼ cup sugar-free chocolate chips (optional)

Step 1: Prepare the Cottage Cheese

Blend the cottage cheese in a blender or food processor until smooth and creamy. This helps create a better cookie texture.


Step 2: Mix Wet Ingredients

In a bowl combine:

  • Blended cottage cheese
  • Egg
  • Vanilla extract
  • Sweetener

Mix until smooth.


Step 3: Add Dry Ingredients

Stir in:

  • Almond flour
  • Baking powder
  • Salt

Mix until a soft dough forms.

Fold in sugar-free chocolate chips if using.


Step 4: Shape the Cookies

Preheat oven to 350°F (175°C).

Line a baking sheet with parchment paper.
