Ingredients

  • 1/2 cup fresh lime juice
  • 1 tsp vanilla extract
  • 1/4 tsp salt (or to taste)
  • 1/4 cup coconut oil

Instructions

  1. In a mixing bowl, combine coconut sugar, maple syrup, fresh lime juice, chia seeds, and coconut milk. Stir well to mix.
  2. Refrigerate the mixture for 2 to 3 hours to allow the chia seeds to absorb the liquid and thicken.
  3. After chilling, add shredded coconut, vanilla extract, and salt to the pudding mixture and stir until combined.
  4. Pour the mixture into a large baking dish and spread evenly.
  5. Refrigerate again for another 2 to 3 hours or until the pudding is fully set.
  6. Once set, use a sharp knife to cut the pudding into bars.
