Ingredients
- 1 cup chia seeds
- 2 cups coconut milk (full-fat preferred)
- 1/4 cup maple syrup
- 1/4 cup coconut sugar
- 1/2 cup unsweetened shredded coconut
- 1/2 cup fresh lime juice
- 1 tsp vanilla extract
- 1/4 tsp salt (or to taste)
- 1/4 cup coconut oil
Instructions
- In a mixing bowl, combine coconut sugar, maple syrup, fresh lime juice, chia seeds, and coconut milk. Stir well to mix.
- Refrigerate the mixture for 2 to 3 hours to allow the chia seeds to absorb the liquid and thicken.
- After chilling, add shredded coconut, vanilla extract, and salt to the pudding mixture and stir until combined.
- Pour the mixture into a large baking dish and spread evenly.
- Refrigerate again for another 2 to 3 hours or until the pudding is fully set.
- Once set, use a sharp knife to cut the pudding into bars.
- Serve chilled and enjoy!
