⭐ Ingredients
- 1 head cauliflower, chopped into florets
- 1 bulb garlic, roasted
- 2 tbsp olive oil
- 1 onion, diced
- 4 cups vegetable broth
- 1 cup milk or cream (cream makes it richer)
- 2 cups sharp cheddar cheese, shredded
- Salt & pepper to taste
- Optional: thyme, chives, croutons, or crispy bacon bits for topping
👩🍳 How to Make It
1. Roast the garlic (the secret flavor boost!)
Slice the top off a garlic bulb, drizzle with a little olive oil, wrap in foil, and roast at 400°F (200°C) for about 35–40 minutes until soft and caramelized.
Let cool, then squeeze out the roasted cloves.
2. Sauté your aromatics
In a large pot, heat 2 tbsp olive oil. Add the diced onion and cook until soft and fragrant.
3. Add cauliflower + broth
Stir in:
- Cauliflower florets
