- 3 carrots, sliced
- 2–3 celery stalks, diced

- 1 bell pepper, chopped
- 1 can (14 oz) diced tomatoes
- 6 cups low-sodium broth (or water)
- 1 tsp paprika
- 1 tsp Italian seasoning
- Salt & pepper to taste

🍲 Instructions
1. Sauté the aromatics
In a large pot, sauté onion and garlic until fragrant.
2. Add the veggies
Stir in carrots, celery, bell pepper, and cabbage.
3. Pour in broth + tomatoes
Bring everything to a boil.
4. Season & simmer
