Cabbage Fat-Burning Soup

A low-calorie, nutrient-dense soup perfect for weight loss, meal prep, and zero-point days (on most WW plans).


Ingredients

  • 1 large onion, chopped
  • 2 large carrots, sliced
  • 3 celery stalks, chopped
  • 2 bell peppers (any color), chopped
  • 1 medium head of cabbage, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable broth (or chicken broth)
  • 1–2 garlic cloves, minced
  • 1 tsp salt (or to taste)
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Optional: crushed red pepper, parsley, lemon juice

🔥 Instructions

  1. Sauté aromatics
    In a large soup pot, spray lightly with cooking spray. Add onion, carrots, celery, and peppers. Cook 5–7 minutes until softened.
  2. Add garlic
    Stir in minced garlic and cook for 30 seconds.
  3. Add remaining vegetables
    Add chopped cabbage and canned tomatoes (with liquid).
  4. Pour in broth
    Add 6 cups vegetable broth and stir.
  5. Season
    Add salt, pepper, paprika, oregano, and any optional spices.
  6. Simmer
    Bring to a boil, then lower heat and simmer for 25–30 minutes, or until veggies are tender.
  7. Finish & serve
    Add fresh parsley or a splash of lemon juice to brighten the flavor.
