Cabbage Fat-Burning Soup
A low-calorie, nutrient-dense soup perfect for weight loss, meal prep, and zero-point days (on most WW plans).
⭐ Ingredients
- 1 large onion, chopped
- 2 large carrots, sliced
- 3 celery stalks, chopped
- 2 bell peppers (any color), chopped
- 1 medium head of cabbage, chopped
- 1 can (14.5 oz) diced tomatoes
- 6 cups vegetable broth (or chicken broth)
- 1–2 garlic cloves, minced
- 1 tsp salt (or to taste)
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp dried oregano
- Optional: crushed red pepper, parsley, lemon juice
🔥 Instructions
- Sauté aromatics
In a large soup pot, spray lightly with cooking spray. Add onion, carrots, celery, and peppers. Cook 5–7 minutes until softened. - Add garlic
Stir in minced garlic and cook for 30 seconds. - Add remaining vegetables
Add chopped cabbage and canned tomatoes (with liquid). - Pour in broth
Add 6 cups vegetable broth and stir. - Season
Add salt, pepper, paprika, oregano, and any optional spices. - Simmer
Bring to a boil, then lower heat and simmer for 25–30 minutes, or until veggies are tender. - Finish & serve
Add fresh parsley or a splash of lemon juice to brighten the flavor.
