Ingredients

  • 1 large head green cabbage, sliced into thick rounds
  • 1½ lb ground beef (80–90% lean)
  • 1 small onion, finely diced
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1–2 tbsp olive oil

Optional toppings: sliced mushrooms, mustard, sugar-free ketchup, fresh herbs

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
  2. Brush cabbage rounds lightly with olive oil; season with salt and pepper. Arrange on the sheet.
  3. In a bowl, mix beef, onion, garlic powder, paprika, salt, and pepper. Form into patties sized to the cabbage rounds.
  4. Place patties on top of the cabbage.
  5. Bake 25–30 minutes, until burgers are cooked through and cabbage is tender.
  6. Optional: Broil 2–3 minutes for extra browning. Rest briefly before serving.

Tips

  • Slice cabbage thick (¾–1 inch) so it holds up.
  • Use lean beef to reduce excess grease.
  • Add Worcestershire or Dijon to the meat for extra depth (check labels).
  • Great with a side salad or roasted veggies.
  • Reheats well for meal prep.
