- 500g ground chicken (or turkey)
- 1 small zucchini, grated and squeezed dry
- 1 small carrot, grated
- 1 small onion, finely chopped
- 1 garlic clove, minced
- 1 egg
- ¼ cup breadcrumbs (or oats for gluten-free)
- 1 tbsp soy sauce or Worcestershire sauce
- Salt and pepper, to taste
- Optional: grated cheese or chopped parsley

- Combine all ingredients in a large bowl.
- Mix until just combined (don’t overwork the meat).

- Form into small rissoles (about palm-sized).
3️⃣ Air Fry
- Preheat air fryer to 180°C (350°F).
- Lightly spray basket with oil.
- Cook for 12–15 minutes, flipping halfway, until golden brown and cooked through.
