📝 Ingredients (Makes 12 Muffins)
For the Dough
- 1 cup self-rising flour
- 1 cup nonfat plain Greek yogurt
For the Toppings
- ½ cup pizza sauce
- 1 cup part-skim shredded mozzarella cheese
- 24 slices turkey pepperoni (2 per muffin)
- ½ tsp garlic powder
- ½ tsp Italian seasoning
Optional but delicious:
- Fresh basil
- Crushed red pepper flakes
- A sprinkle of parmesan
👩🍳 Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 12-cup muffin pan.
- In a medium bowl, combine self-rising flour and Greek yogurt to form a soft dough.
(If sticky, dust hands lightly with flour.) - Divide dough into 12 equal pieces and press each piece into the bottom of a muffin cup, forming a little dough base.
- Add 1–2 teaspoons of pizza sauce to each dough cup.
- Sprinkle each with mozzarella cheese.
- Top with 2 slices of turkey pepperoni.
- Finish with a pinch of garlic powder and Italian seasoning.
- Bake for 15–18 minutes, or until the cheese is golden and bubbling.
- Let cool for 5 minutes before removing from the pan.
