1-Point Almond Joy Cookies

Soft, chewy, coconut-chocolate clusters — no flour, no fuss, just mix and bake!


🛒 Ingredients (Makes ~20 cookies)

1 ½ cups unsweetened shredded coconut
½ cup Lily’s no-sugar-added chocolate chips (or chopped bar)
½ cup sliced almonds
½ cup egg whites (or 2 large egg whites)
¼ cup monk fruit sweetener (or any zero-point sweetener)
1 teaspoon vanilla extract
✔ Pinch of salt


👩‍🍳 Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment or lightly spray it.
  2. In a bowl, combine:
    • shredded coconut
    • chocolate
    • almonds
    • sweetener
    • salt
  3. Add egg whites + vanilla. Mix until fully coated and sticky.
  4. Scoop into small mounds (1–1½ tablespoons each), shaping lightly with your hands.
  5. Bake 12–14 minutes, until edges turn golden.
  6. Let cool completely — they firm up as they cool.
