🛒 Ingredients (Makes ~20 cookies)
✔ 1 ½ cups unsweetened shredded coconut
✔ ½ cup Lily’s no-sugar-added chocolate chips (or chopped bar)
✔ ½ cup sliced almonds
✔ ½ cup egg whites (or 2 large egg whites)
✔ ¼ cup monk fruit sweetener (or any zero-point sweetener)
✔ 1 teaspoon vanilla extract
✔ Pinch of salt
👩🍳 Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment or lightly spray it.
- In a bowl, combine:
- shredded coconut
- chocolate
- almonds
- sweetener
- salt
- Add egg whites + vanilla. Mix until fully coated and sticky.
- Scoop into small mounds (1–1½ tablespoons each), shaping lightly with your hands.
- Bake 12–14 minutes, until edges turn golden.
- Let cool completely — they firm up as they cool.
