📝 Ingredients

(Makes about 6–8 servings | All ZeroPoint foods on WW)

  • 1½–2 lbs boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained & rinsed
  • 1 can (15 oz) pinto beans, drained & rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (10 oz) Rotel tomatoes with green chiles
  • 1 medium onion, chopped
  • 3 cups fat-free chicken broth
  • 1 packet taco seasoning (look for low-sodium / sugar-free)
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt & pepper, to taste

👩‍🍳 Instructions

  1. Add everything to the slow cooker
    Place chicken breasts in the bottom of the crockpot. Add beans, corn, tomatoes, onion, broth, and seasonings.
  2. Cook low & slow
    • LOW: 6–8 hours
    • HIGH: 3–4 hours
  3. Shred the chicken
    Remove chicken, shred with two forks, then return it to the soup.
  4. Stir & serve
    Taste and adjust seasoning if needed. Serve hot and enjoy!
