Ingredients (Serves 1–2)

  • 2 large low-carb tortillas (or make your own with 2 eggs + 2 tbsp almond flour + 1 tbsp cream cheese, cooked thin)
  • 1 cup (100g) shredded mozzarella cheese (or mix with cheddar)
  • 20–25 slices pepperoni
  • ½ tsp Italian seasoning
  • ¼ tsp garlic powder
  • Optional: 2–3 tbsp sugar-free pizza sauce or marinara inside

Instructions

  1. Heat a large non-stick skillet over medium heat.
  2. Place one low-carb tortilla in the skillet. Sprinkle half the mozzarella evenly over it.
