Ingredients (Makes 12–14 cookies)
- 1 cup (100g) almond flour
- ⅓ cup (35g) vanilla whey protein powder
- ⅓ cup (65g) allulose or powdered monk fruit sweetener
- ¼ cup (60g) butter or coconut oil, softened
- 1 large egg
- 1 tsp vanilla extract
- ½ tsp baking powder
- ¼ tsp salt
- ½ tsp cinnamon (optional)
- ½ cup (50g) chopped pecans + 12–14 pecan halves for topping
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, cream together softened butter and sweetener until light. Add egg and vanilla, mixing well.
- Stir in almond flour, protein powder, baking powder, salt, and cinnamon (if using) until a dough forms. Fold in chopped pecans.
- Scoop 1–1½ tbsp portions of dough, roll into balls, and place on the baking sheet. Gently press a pecan half into the top of each cookie and flatten slightly.
- Bake 10–13 minutes until edges are golden (centers will look slightly soft). Let cool on the sheet for 10 minutes before transferring to a wire rack.
