Ingredients (Makes about 64 small cubes)

  • 3 tbsp unflavored gelatin powder (about 3 packets)
  • ½ cup cold water
  • ½ cup allulose or monk fruit sweetener (granular)
  • ¼ cup boiling water
  • 2 scoops (50–60g) vanilla whey protein powder (or unflavored)
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • A few drops natural pink food coloring (optional)
  • Optional: extra protein powder or powdered sweetener for dusting

Instructions

  1. Lightly grease an 8×8-inch pan and line with parchment paper. Dust lightly with powdered sweetener or protein powder.
  2. In a large bowl, sprinkle gelatin over ½ cup cold water. Let bloom for 5–10 minutes.
  3. In a small saucepan or microwave-safe bowl, combine sweetener with ¼ cup boiling water and stir until dissolved.
  4. Pour hot sweetener mixture into the bloomed gelatin. Add protein powder, vanilla, salt, and food coloring (if using).
  5. Using a hand mixer or stand mixer, whip on high speed for 8–12 minutes until the mixture becomes thick, fluffy, and tripled in volume (like marshmallow fluff).
  6. Quickly spread into the prepared pan. Smooth the top and dust with more powdered sweetener/protein powder.
  7. Let set at room temperature for 2–4 hours (or refrigerate for faster setting). Cut into cubes with a sharp knife.
