Ingredients (Makes about 64 small cubes)
- 3 tbsp unflavored gelatin powder (about 3 packets)
- ½ cup cold water
- ½ cup allulose or monk fruit sweetener (granular)
- ¼ cup boiling water
- 2 scoops (50–60g) vanilla whey protein powder (or unflavored)
- 1 tsp vanilla extract
- ¼ tsp salt
- A few drops natural pink food coloring (optional)
- Optional: extra protein powder or powdered sweetener for dusting
Instructions
- Lightly grease an 8×8-inch pan and line with parchment paper. Dust lightly with powdered sweetener or protein powder.
- In a large bowl, sprinkle gelatin over ½ cup cold water. Let bloom for 5–10 minutes.
- In a small saucepan or microwave-safe bowl, combine sweetener with ¼ cup boiling water and stir until dissolved.
- Pour hot sweetener mixture into the bloomed gelatin. Add protein powder, vanilla, salt, and food coloring (if using).
- Using a hand mixer or stand mixer, whip on high speed for 8–12 minutes until the mixture becomes thick, fluffy, and tripled in volume (like marshmallow fluff).
- Quickly spread into the prepared pan. Smooth the top and dust with more powdered sweetener/protein powder.
- Let set at room temperature for 2–4 hours (or refrigerate for faster setting). Cut into cubes with a sharp knife.
