Ingredients (Makes 8–10 bars)
- 2½ cups (200g) unsweetened shredded coconut
- ⅓ cup (35g) vanilla whey protein powder
- ⅓ cup coconut oil or butter, melted
- ¼ cup allulose or monk fruit sweetener
- 1 tsp vanilla extract
- ¼ tsp salt
- 8–10 oz sugar-free dark chocolate chips (for coating)
- 1 tbsp coconut oil (for melting chocolate)
Instructions
- In a food processor or large bowl, mix shredded coconut, protein powder, sweetener, and salt.
- Add melted coconut oil and vanilla extract. Process or stir until a sticky dough forms.
- Press the mixture firmly into a small parchment-lined loaf pan or shape into bars by hand.
