Ingredients (Serves 4)

  • 1½–2 lbs large shrimp, peeled and deveined
  • 2 tbsp butter
  • 4–5 garlic cloves, minced
  • 1 small onion, finely diced (optional)
  • 1 cup heavy whipping cream
  • 4 oz (115g) cream cheese, softened
  • ¾ cup grated Parmesan cheese
  • 3–4 cups chicken or seafood broth
  • 1 tsp dried dill or Italian seasoning
  • Salt & black pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat. Add garlic (and onion if using) and sauté for 1 minute until fragrant.
  2. Pour in broth, heavy cream, cream cheese, Parmesan, dill, salt, and pepper. Stir until the cheese melts and the soup is smooth and creamy (3–4 minutes).
