Ingredients (Serves 4)
- 1½–2 lbs large shrimp, peeled and deveined
- 2 tbsp butter
- 4–5 garlic cloves, minced
- 1 small onion, finely diced (optional)
- 1 cup heavy whipping cream
- 4 oz (115g) cream cheese, softened
- ¾ cup grated Parmesan cheese
- 3–4 cups chicken or seafood broth
- 1 tsp dried dill or Italian seasoning
- Salt & black pepper to taste
- Fresh dill or parsley for garnish
Instructions
- Melt butter in a large pot over medium heat. Add garlic (and onion if using) and sauté for 1 minute until fragrant.
- Pour in broth, heavy cream, cream cheese, Parmesan, dill, salt, and pepper. Stir until the cheese melts and the soup is smooth and creamy (3–4 minutes).
- Add the shrimp and simmer gently for 4–6 minutes until shrimp are pink and cooked through.
