Ingredients (Serves 4)
- 1.5 lbs (680g) boneless chicken thighs or breasts, cut into bite-sized pieces
- 4 cups broccoli florets
- 2 tbsp olive oil or avocado oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and black pepper, to taste
Creamy Garlic Ranch Sauce:
- ½ cup sour cream or Greek yogurt
- ¼ cup mayonnaise
- ¼ cup heavy cream
- 2 garlic cloves, minced
- 1 tsp dried dill or ranch seasoning (sugar-free)
- ½ tsp onion powder
- 1 tbsp lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season chicken pieces with garlic powder, smoked paprika, salt, and pepper.
- Heat oil in a large skillet over medium-high heat. Cook chicken for 5–7 minutes until golden and cooked through. Remove and set aside.
- In the same skillet, add broccoli florets with a splash of water. Cover and steam for 3–4 minutes until bright green and tender-crisp.
- While broccoli cooks, whisk together all sauce ingredients in a bowl until smooth and creamy.
- Return chicken to the skillet with broccoli. Pour sauce over everything and toss gently to coat. Cook 1–2 minutes until heated through.
- Garnish with fresh parsley and serve immediately.
