Ingredients (Serves 4)

  • 8 large hard-boiled eggs, chopped
  • ⅓ cup full-fat mayonnaise
  • ⅓ cup full-fat Greek yogurt or sour cream
  • 1 tsp Dijon mustard
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp smoked paprika (optional)
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper
  • 2 tbsp fresh chives or green onions, chopped
  • 1 tbsp fresh dill or parsley (optional)

Instructions

  1. Place eggs in a pot, cover with water, and bring to a boil. Turn off heat, cover, and let sit for 10–12 minutes. Cool in ice water, peel, and chop.
  2. In a large bowl, mix mayonnaise, Greek yogurt, mustard, garlic powder, onion powder, paprika, salt, and pepper until smooth.
  3. Add chopped eggs, chives/green onions, and herbs. Gently fold until well combined but still chunky.
