Ingredients (Serves 4)
- 8 large hard-boiled eggs, chopped
- ⅓ cup full-fat mayonnaise
- ⅓ cup full-fat Greek yogurt or sour cream
- 1 tsp Dijon mustard
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp smoked paprika (optional)
- ½ tsp salt (or to taste)
- ¼ tsp black pepper
- 2 tbsp fresh chives or green onions, chopped
- 1 tbsp fresh dill or parsley (optional)
Instructions
- Place eggs in a pot, cover with water, and bring to a boil. Turn off heat, cover, and let sit for 10–12 minutes. Cool in ice water, peel, and chop.
- In a large bowl, mix mayonnaise, Greek yogurt, mustard, garlic powder, onion powder, paprika, salt, and pepper until smooth.
- Add chopped eggs, chives/green onions, and herbs. Gently fold until well combined but still chunky.
- Taste and adjust seasoning. For best flavor, cover and refrigerate for 20–30 minutes.
- Serve in lettuce wraps, on cucumber slices, or in a bowl with a spoon.
